At this masterclass, you’ll meet Nicholas Min Jørgensen, who, with TRI, has demonstrated that exceptional dining experiences can be created almost anywhere—provided the pantry is rich and well-sourced.
In 2022, he opened TRI in the small coastal town of Agger in Thy, on Denmark’s west coast. Here, he presents a tasting menu inspired entirely by local ingredients, accompanied by the stories of the people who help make the region’s produce so distinctive. The menu features 15–17 courses, continually evolving with the seasons and availability.
Within its first year, TRI was awarded a Michelin star, followed by a Green Star in 2024. In just four years, the restaurant has received and been nominated for a wide range of accolades, including Sustainable Restaurant of the Year, Best New Restaurant, Best Seafood Restaurant and Restaurant of the Year. TRI is also ranked among the ten most sustainable restaurants in Denmark by 360Eat Guide, a guide dedicated to highlighting sustainable dining practices.
At the Tivoli masterclass, Nicholas will present his signature dish—also featured when he and the TRI team visited The Pagoda:
“Emulsion of Limfjord oyster, cabbage salad and warm buttermilk.”
