During the masterclass, you’ll learn how to build flavour layer by layer as Mark prepares salt-baked turbot with white asparagus and a blanquette sauce made from chicken stock and browned butter. You’ll gain insight into techniques such as the precise salt-baking of fish, balancing acidity and richness in sauces, and how the origin of ingredients and the craftsmanship behind their preparation shape the final result.
