Francis Cardenau is one of Denmark’s most influential chefs. Arriving in 1989 with a classical French culinary foundation, he became the first in the country to earn two Michelin stars at Kommandanten. His uncompromising focus on ingredients, craftsmanship and flavour has helped shape modern Danish gastronomy—not least through restaurants such as Le Sommelier, Umami and MASH.
For many years, he has inspired new generations of chefs as former president of Bocuse d’Or Denmark. Today, he has stepped back to enjoy life as a semi-retired chef, while supporting his children in the family business CARDENAU, where flavour, ingredients and craftsmanship remain at the core.
In this masterclass, you’ll taste a classic from Francis’ time at Kommandanten: a lemon mousse – known in Denmark as citronfromage. Here, he reimagines the traditional dessert with a contemporary twist, pairing it with lentil nougat and rhubarb.
