This communal dining experience is an invitation to immerse yourself in the informal yet dedicated gastronomy at the heart of the CARDENAU universe. Seated at a long table, you’ll enjoy a carefully crafted menu that reflects CARDENAU’s passion for pure flavours, the finest seasonal ingredients, and classical culinary craftsmanship—always with a French touch.

The dinner will showcase a selection of local producers from Zealand’s coast to its inlets, celebrating both the region’s ingredients and the talented people behind them, all brought together through CARDENAU’s distinctive culinary vision.

CARDENAU was founded on a deep passion for flavour, craftsmanship, and quality produce. Behind the name are Francis Cardenau—one of Denmark’s most acclaimed chefs—and his son Victor Cardenau, who together carry forward their family’s culinary legacy with a modern approach.

We reserve the right to request valid ID if there is any doubt about age. Alcohol will not be served to anyone under 18.

Snack
Gillardeau oysters with fermented pumpkin, Espelette chili, basil, and pomegranate.
Gougères
Onion salad with Danish Anicia lentils.

Starter
Asparagus with mussel salad and Danish lentils, purée of fresh Danish peas.

Main Course
Danish porchetta with grilled summer vegetables à la Barigoule and new potatoes, bitter salad with sea buckthorn vinaigrette, pan jus, and freshly baked bread.

Dessert
Rhubarb baba with basil olive oil, baked rhubarb, caramelized almonds, and a veil of Friis Holm chocolate.
