A Taste of the North Sea – Served in Tivoli

Look forward to an evening where you can taste your way all the way to the North Sea – right in the heart of Copenhagen.

Three of Destination Vesterhavet’s top restaurants – Restaurant RI10, Nymindegab Kro, and Restaurant NORDIC – are joining forces for this exclusive long table dinner, where each restaurant presents a signature dish created with local ingredients and inspired by the West Coast’s unique nature and culinary history.

The dinner begins with a snack and a welcome drink while the first course is being prepared. Along the way, you’ll be served a delicious cheese platter and specialties from Enghavegård Dairy & Farm Shop, and the evening concludes with a dessert developed jointly by the three restaurants.

The dishes are served as a mix of shareable platters and individually plated servings – all prepared with respect for West Jutland's culinary culture, with a focus on great taste and modern interpretation. The spotlight is on the treasures of the North Sea and the first seasonal produce sprouting in May. You’ll also get a taste of the quality meats and dairy products that the region takes great pride in.

Selected beverages from local breweries, wineries, and distilleries will be served.
A non-alcoholic beverage menu will also be available – so in true West Jutland fashion, there will be plenty of both food and drink.

Appetizer

The evening begins with a fresh and floral welcome drink from Better Drinks and Aromagaarden.
Served alongside small appetizers from Enghavegård Cheese Dairy & Farm Shop.

 
Restaurant RI10 – Hvide Sande

Coregoninae from Ringkøbing Fjord, gently prepared and glazed with apple barbecue.
Served with fresh herbs and a hint of citrus zest.

Side dishes include creamy pommes aligot made with Vesterhavsost and Havgus cheeses,
crispy buckwheat kernels, cabbage, wild garlic, and lemon.

Nymindegab Kro – Nymindegab

Poached white asparagus with a creamy asparagus blanquette, split with wild garlic oil.
Served with warm potato salad featuring new Danish potatoes, red onions, and fresh herbs in sherry vinegar.

Restaurant NORDIC – Ringkøbing

Slow-roasted Varde Ådal lamb, served with seasonal vegetables, herbs, and crisp textures.
A dish that celebrates animal welfare, sustainability, and West Jutland food culture.

Enghavegård Cheese Dairy & Farm Shop

Cheese platter with five characterful varieties – Holmen, Kjelst, Ho, Skallingen, and Langli –
served with seasonal accompaniments, developed in collaboration with Nymindegab Kro.
A proud expression of West Jutland craftsmanship and cheese maturation.

Velvety goat cheese cream from Nørregårds Goats, with tangy berry compote and crunch.
Created in collaboration between the three restaurants – a light and refined finale with depth and freshness.
