About Saporium

Saporium originates from the Danish-owned luxury hotel Borgo Santo Pietro in Tuscany. At the helm of the kitchen is Ariel Hagen, whose culinary journey began in his grandmother’s kitchen, where he was introduced to Tuscany’s rich food traditions. His path later led him to some of Europe’s most renowned restaurants, including the three-starred St. Hubertus. In his very first year at Saporium, he was awarded both a Michelin star and the prestigious Green Star for sustainability. Today, Hagen crafts a unique gastronomic experience, guided by a deep respect and affection for nature’s ingredients.
