Meet Executive Chef Martin Rommel from Restaurant Surt & Sødt and taste some of his creations at the Tivoli Food Festival.

Martin will bring a small smoker to the HTH Live Kitchen, where he will prepare freshly smoked Faroese salmon. He transforms the ash from the smoking process into a sugar ash, which is used in the restaurant's dessert “Lejrbål” (Campfire). You will enjoy the opportunity to taste both and learn more about the ingredients used.

Located in Nakskov on the island of Falster, Restaurant Surt & Sødt is renowned for its wide selection of pickled and fermented delicacies, along with vinegars crafted from ingredients sourced within the Lolland-Falster and Møn archipelago.
